Vinification:
Grapes are hand-picked at the optimum of their maturity. Soft
de-stemmed grapes are cooled down to t 4-60C and then gently
pressed in the pneumatic press. Later, the settled and clear
juice starts fermenting slowly at precisely controlled temperature
(150C) in stainless steel tanks. After the fermentation completes,
the wine is racked to another tank for farther refinement.
Wine is usually bottled in few month after the vintage.
Tasting notes:
Color: Pale golden with greenish highlights.
Aromas: Intense floral and inviting nose with hints
of apple blossom, acacia.
Palate: It's dry, but full and weighty to taste with
notes of poached pear and honey, and a lingering crisp and
zesty finish.
Food matching:
A good partner to roast chicken or pork, or creamy pasta dishes.
