Welcome
THE are many traditions
associated with wine. Just as the Japanese have the “tea ceremony”,
we Georgians have wine traditions. In Georgia, a newborn child is
welcomed with a toast. When he gets married, his new family is blessed
with a toast. At his death, a farewell is said with a toast. If
you come to Georgia you’ll get amazed with hospitality of the people.
Traditions of winemaking as well as the secrets of preparing Georgian
feast “supra”, which is an Aladdin’s cave of culinary discovery,
are transmitted over generations. The wine and the food should complement
each other not battle against each other. The old rules- red wine
with meat and white wine with fi sh and poultry- are broken. You
can simply follow the saying “Simple wines with complex foods...
Complex wines with simple foods.” When pairing food and wine, the
goal is synergy and balance. A good match will bring out the nuances
and enhance the fl avors and unique characteristics of both the
food and the wine.
