Vinification:
The fully frozen grapes in Rkatsiteli southern blocks of Kondoli
vineyards and selected old Rkatsiteli vineyards in Ikalto
village in Kakheti have been picked in early December, when
the outside temperature fell down to -9°C.
As most of the water is frozen in the berries, the yield of
resulting juice is very much reduced, but the concentration
of sugars, acids and aromatic compounds on contrary is increased.
The grapes were hand harvested early in the morning in small
boxes, hand sorted in our winery, all the damaged grapes were
removed and gently pressed in basket press. The fermentation
was held for 2 month period in stainless steel tanks at a
controlled temperature 16-18°C.
After fermentation wine was kept cold around 0°C
for 6 month. Light filtration complemented by bottling and
6 month bottle aging in our cellar before the release.
Tasting notes:
Color: Light golden with shimmering silver highlights.
Aromas: Nose is redolent of ripe pineapple, pears and
nectarinesand orange zest.
Palate: it flavours enhance the natural sweetness of
the wine to give balance and intensity. A tantalizing fresh
pineapple tingle lingers in the mouth long after wine has
gone.
Food matching:
Aperitif, digestive, soft and spicy cheese or desserts.
Temp.: 8-10°C.
